Skill moves, as you'll see, come in five tiers - one, two, three, four, and five stars - based on their difficulty to execute.

Only players with the required skill moves rating or above will be able to pull them off - so you won't get Phil Jones pulling off a Sombrero Flick, but likewise if you're no good at mastering the controls themselves, you might only be able to get Neymar to pop a single stepover. Practice is as important as ever, too!
