The Jets can go far beyond the normal playable area of the game so the 2D smoke was to be expected and remember the beta does not feature the Ultra graphics settings they are still turned off.

The only thing I noticed about the video was what kind of fool keeps the jet in follow cam like that and how drunk or terrible the pilot seemed to be.

It's not console footage, this is PC - as @00:35, there is a PC notice in the bottom right corner, saying to shift + right click something.

The Caspian border map is only available to PC on a closed Beta. Xbox 360 is looking pretty decent to be honest mate.
