Just go out and get some coconut milk. I wouldn't substitute it with anything. It's nothing like actual milk
This. Or get the condensed coconut stuff and never ever run out of coconut milk equivalent for the rest of your entire life.

LB, you really are a massive geek.

Hello good people of EG foodings.

I want to make a Thai Red curry tonight, however I do not have any coconut milk....can I substitute it with normal milk?

    I'd say no.

If you really can't get any (did you go shopping for all the other ingredients already? or are you making it from a jar?) then we're on to improvising. If you're really pushed you could go for a sweet-ish plain yoghurt, or some natural yoghurt sweetened with a bit of sugar. I'd add the joghurt really gently bit by bit - and you'll want to add some water with it. Then if the curry lacks sweetness you could add a tablespoon of sugar at a time.

I have none of those ingrediants :( Just moved in and did a very random shop that I am determined to live off for 1 week.

Think I might try and get some cheapo coconut milk.

    Come and get it cumslingers!

Just moved to Putney, the ethnic mix is pretty full on Australian/South African. Aussie's do love thai food though, so I'm sure I'll find somewhere.

    Come and get it cumslingers!

I like it AND I had the worst Thai red curry take away ever on Saturday night, so I am determined to get a proper fix!

Lol. Putney's full of supermarkets. They'll all stock coconut milk.

Tombo: Yeah, I'm still getting used to not living in Twickenham where you have to go to the massive tesco in order to get anything that's not basic.

I had tonight a steak ciabatta for me and my missus. Was very pleased with it. Steak was nice and rare. Served it on the ciabatta's sliced in half down the middle and one slide had fried onions and fried cherry tomatoes and on the other slice the steak and mushrooms with loads of garlic butter melted in.

    Gorgeous.

It'd never work without coconut milk mate. You need to boil the milk right down for it to crack and split into cream and oil, then fry the paste of for a good while in that. Then add a little more at the end You just wouldn't get anywhere near the same flavour.

Or, make your own, it's really easy takes about ten minutes and it's so much better than any shop bought paste. You're better off with palm sugar, rather than cane sugar too.

edit: Sorry ecosse, missed the 'fresh' word!

Takes me ten minutes! I can't get proper Thai garlic up here though, although I've not seen a Thai person make red curry paste with those tiny cloves, they normally use standard garlic and there's not so much garlic in it anyway. It's the bloody shallots that are a pain to peel!

I want Razz's dinner. Except for the Guiness, he can keep that.

A strange game. The only winning move is not to play.
