This won't help you but last night I made chili con carne lasagne with 3 different types of cheese, smoked chilis, and nachos on top. It was fantastic. -

Registered 11 years agoFor my TEA I've had risotto, mainly using this Jamie Oliver recipe with home-made chicken stock that I've had in the freezer for ages, but using extra dry vermouth instead of plain dry vermouth, mushrooms in with the veg, and cream towards the end of heat rather than extra butter afterwards. Forgot to fry the rice before adding the vermouth.
Turned out more than edible. Rice could have done longer i.e. I should have used some boiling water after the stock had been used up - it was fairly al-dente after all the stock had been used up, but I expected it to cook more after I added the cream and in the cooling off period. As it is it's still got more bite than it should in my idea of what a risotto is (though to be fair, I've never eaten a proper risotto, so I dunno). Celery's still surprisingly crunchy too. Think I need a bigger knife for chopping that much celery. I also didn't use as much parmesan as Oliver recommends in the end, as to be honest after adding half what he recommended it already looked like an insane amount of cheese.
Will definitely be doing that again, once I've made some more stock. Well, I've got all that risotto rice to use up, and that vermouth (though I will be making a martini later, stirred not shaken).Cubby didn't know how to turn off sigs!

Registered 4 years agoI do love a good homemade risotto. I tend to make mine with mushroom stock (from soaking dried mushrooms), using dry white wine and several different mushrooms - porcini, chestnut and shitake - along with a squeeze of lemon and some pesto.
Anyway, tonight is curry night! Bombay potato, pitta crisps, chicken madras and jasmine rice. Quick and easy, but oh so tasty.Now with 80% more Cthulhu!

Registered 4 years ago@mal You need to sauté the rice next time. I think it helps the texture. Definitely gives it a better flavour. I love risotto.
Sainsburys screwed up my delivery today, so I made half-dead vegetable chilli from what remained in my fridge & veg cupboard. Aubergine, courgette, pepper, potato & shallots, with cannellini beans & chopped tomatoes, brown basmati. It was darn tasty, and just hot enough to warrant a dollop of sour cream. Loads left too.Playing all the right notes— but not necessarily in the right order.

Registered 6 years agoMade chilli. It was a little on the bland side though, and I'm not entirely sure why. Had onion, garlic, chilli, some cinnamon, basil I think and salt/pepper.
What does the EG force recommend for good tasty chilli? -
