    Yay unless its pre-packed crap like you find with the sandwiches in M&S. Seriously what the fuck do they do to the rice to make it that disgusting (though the actual fish isn't bad).

    I was out swimming the other day, when suddenly I chanced upon a fish. It was the most beautiful fish I had ever seen, it's scales glisterned in the murky underwater sunlight and I couldn't help but be totally mesmerised by it.

    Suddenly, it looked at me, I couldn't tell at first but then I realised - it was the same look that generic enemy homie #102938 had given me back in the endz. Engraged, I dived down and grabbed the bitch, I was so angry I lost control and took a bite out of it. Now that's what I call good sushi,

    Oh hell yay, if you can find it fresh. For ages I couldn't, and the best I could find was Waitrose, but then I went to Teri-Aki in Cambridge and got moderately ripped off (as you do for sushi), but then the sushi was amazing. PERFECT amount of wasabi.

    You've never had a maki roll? It's smoked salmon isn't it? Those aren't raw. I'm a little unsure, but I'm pretty sure even the sushi with fish in it isn't automatically raw.

    And there's plenty of veggie sushi too, which is also nice.

    Unagi is lovely. It's eel.

    But maki does not mean it's salmon. And salmon in sushi generally isn't smoked, instead it's freeze treated.

    We have a book on sushi-lore in our bookshop... I always mean to read up. Keep flicking through and forgetting everything.

    But am I right? It isn't all raw? The more you tell me it is, the more hardcore I feel for eating it ;-)

    There's a Rick Stein programme where he cooks for the Japanese ambassador. He ends up at a fish market in Tokoyo where there's this expert samuri type fishmonger. Apparently a top range tuna at christmas time (the height of the market) is worth 50 grand! So you have to cut it right to get the maximum profit. But 50 grand, jeez.

    Apart from unagi I can't think of any fish (is eel a fish?) that would be usually cooked in sushi. Of course nothing stops you from using cooked fish; it's the rice that makes sushi.

    Sushi - yay. Only when it's done properly though. Otherwise it can be a bit manky. That means done from fresh and done properly - none of this pre-made shite thanks.

    Like a lot of things, do it right and resist shortcuts and it can be bloody brilliant. Do it wrong or cheat and it's going to be vile.

    Maybe I'm going to the wrong places, but sushi in the UK is currently at the level of curry in the 80s IMO - the foundations are there, but it's not quite right yet.

    It's the one main thing I miss from Vancouver. Great place to visit if you like sushi (although don't visit the curry houses).

    A lot of the tuna sold on the Tokyo fish market is imported by air freight from the mediterranean every morning.

    My major problem with sushi is that it's pretty much the same thing every time. The same rice, the same soy and the same damned wasabi. There is very little deviation from the set path.

    There are so many more interesting things that can be done with uncooked fish.
