    I dunno what you mean exactly. America is a big place and there are lots of types of tomato sauce. Mrs Kitsuneyo is from Texas and she calls ketchup ketchup, passata passata, and so on. I think they use passata the same way we do.

    Judging by this it's what my recipe makes. It has an italian name if you include the basil, though I can't remember what it is. With chilli it's arrabiata.

    Strange this thread came up today, I made a calzone last night. It contained tomato, mozarella, chorizo and smoked gammon bits. OM NOM NOM.

    I needed to drain the mozarella a bit more though - there was a small amount of water when I cut it open (not enough to dampen the crust, thank god!).

    Tomato Puree definitely has its uses. But to put it on a pizza is demented. Has no subtelty and is far less aromatic than some lovingly created sauce.

    Spot on. It's great for casseroles and for bolstering some sauces, but for pizza it's just a no.

    It's like making a delicious Black Forest Gateau from scratch, then topping it with a huge turd instead of cherries.

    I wouldn't put puree on my pizza, but I also wouldn't spend 20 minutes making a tomatoe sauce. Basically, you both suck balls.

    Me too. Passata mixed with a few chopped tomatoes (from a can) and a sprinkle of Italian Herbs - takes about a minute - perfectly fine as a pizza base.

    A bit of olive oil, squirt of lemon juice, a little water, crushed clove of garlic, pinch of herbs... Dunno, whatever I fancy at the time.

    I use goosefat.

    Which I farm myself. I kill the geese with a 19th century razor as modern knives taint the bird. I use the tears of four small children to lubricate the goose fat dispenser.

    Plus I only cook pizza's on tuesdays as the planet is furtherest from Saturn and its cosmic rays can ruin a good dough.

    I take a slice of ASDA white, put some ketchup on it, put some cheese on top of that, then put it under the grill for 3 minutes.
