If you're making pickled onions yourself, whack some chillies in there.

Way head of you, put some in with the shallots earlier :-)

They love pickling stuff here in Prague. My particular favourite at the moment is utopenci, pickled pork sausages. A bit like these, in fact. Lovely with a freshly-poured Pilsner.

That sounds quite interesting. Is it something you can do at home, or would you need to buy them ready-made?

Normal pickled onions or the kind you get in a chippy next to the pickled eggs?

The world is going mad. Me? I'm doing fine.

Anyone ever tried pickled watermelon? It's a US thing apparently. It's mostly the rinds from what I understand.

    Pickled watermelon? Sounds... interesting.

I've spent my morning peeling, topping and tailing 2 kilos of baby onions. There was something oddly relaxing about it, but now my living room reeks of onion.

Thinking of branching out next week into chutneys, and maybe pickled eggs.

It can be done at home, but I couldn't name any sausages I've seen for sale in England that are quite the same as the ones they use out here (doesn't necessarily mean they can't be found though). You could substitute any kind of smoked pork sausage though, even large hot dogs should do the trick. I'm sure there are recipes online if you do a spot of googling.

Just found an awesome sounding recipe for a homemade branston pickle:

    http://www.yummly.com/recipe/The-Almost-Original-Branston-Pickle-Recipe_-Recipezaar

Going to try it this week, after I've picked up some more kilner jars.

Now I've started pickling things, I can't stop! Moving onto chutneys and other things this week. Found a nice recipe for a tomato and apple spiced chutney, and for a hot and spicy aubergine chutney.

Just made ten jars of spiced apple and tomato chutney. It already tastes bloody gorgeous right now, can't wait to see what it's like after a few weeks of maturing.

    Recipe:

2kg tomatoes, peeled and roughly chopped*
1kg bramley apples, peeled, cored and chopped
    2 medium brown onions, diced
    250g sultanas
    250g caster sugar
    2 tbsps Mild Curry powder
    1 tbsp salt
    2tsp Cayenne Pepper
    2tsp crushed black pepper (don't use pre-ground)
568ml Malt Vinegar (bottles of malt vinegar will be sold in this volume from your local supermarket for less than 50p)

    1. Place all of the ingredients in a large pan (a regular stock pot is best), stirring to ensure an even distribution.

    2. Place on a high heat for approx. 45 minutes, lid off, stirring occasionally. After this time turn off the heat and allow to cool.

    3. Place into sterilised jars and leave for 3-4 weeks to mature.

Don't worry about any excess liquid - you don't want your chutney too watery. Drain any excess juices. Also, don't worry if the apples seem too firm after cooking - several weeks of maturing will soften them a little further.

*A fool proof way of peeling tomatoes is to take a sharp knife and make a cross pattern from the base of the tomato to the top, the plunge in boiling water for 20-30 seconds. Remove the tomato and allow to cool. After this, it should be easy to remove the skin. Wait until fully cool before chopping.

Delicious with cheese, cold meets, or with curry, bhajis, etc.
