Dragon Quest V would be the best to start with although you'll have to import from america, the european version is a rare as hens teeth. If you can't get DQV then you really can't go wrong with DQ4-6 or 8 and 9. 7 has some major pacing problems.

IX on the DS is probably a good starting off point.

If you can track down IV, V and VI, they're excellent games as well. VII and VIII are likely to be re-released for something at some point.. and hopefully we will get this collection sooner or later too.

Dragon Quest VIII is a truly epic game. If you have a PS2 then that's the one to go for.

On the DS I'd recommend V or VI. Can't go wrong with any of them though.

Well DQV is out here on the DS, my personal favourite of the series, buy it !

oh, and DQV is one of my all time fave RPGs. I hold it right up there with FF6 and Chronotrigger. Perhaps even a little higher.
