I think generously scoring your meat helps the hot chilli powder penetrate deeper.

    @Benno

Molasses can be tricky to get hold of. Dark treacle is a close substitute and is far cheaper and widely available.

I make my own treacle, it's far better than this instantly available stuff you can buy.
  • Deleted user 29 November 2012 19:48:56
I drown pigs in molasses to better infuse the flavour.

You won't get it at your corner shop, but my local Morrisons has it, so I wouldn't describe it as tricky to get.

Don't you judge me, you probably only season your meat with 4-7 spices.

    Decent pulled pork recipe:

    1 x pork
1 x bottle of barbecue sauce

Combine in slow cooker. Eat when it's ready.

Pork, tinned toms, smoked paprika, onion, seasoning, water. Cook in a low oven in a close fitting lidded casserole dish until you can't wait any longer. Pull apart with a fork and chuck it in a Po' Boy.

What's all this cooking indoors shit? Smoke the pork, on a grill if you must, otherwise what's the point?

    Man after my own heart!

Though in terms of doing pulled pork, the slow cooking is a rather fundamentally essential process. Nothing stopping you smoking then slow cooking in liquid after though, and It's something used a lot in the various BBQ cookbooks I have as well as a lot of the BBQ-focused/ general american cooking shows like Drive-Ins, Diners and Dives, Heat Seekers, etc.

My "no muss, no fuss" recipe for pulled pork:

    - Leave house
    - Walk here: http://www.guardian.co.uk/lifeandstyle/2011/jul/24/jay-rayner-restaurants-bbq-shack
    - Order pulled pork sandwich
    - Wait
    - On food's arrival, snaffle like a caveman

I only eat salad if it's been pickled in goose fat for at least 17 days.
