If you're looking for benchmarks I'd say Witcher 2 and Arkham City. They are the only two my PC still struggles with sometimes despite my new GTX670 OC.
Metro 2033 runs perfectly smoothly at highest details now.

Otherwise all 3D games released in the last 4 years look a lot more impressive when cranked up all the way to be honest.
I'm particularly impressed with Guild Wars 2 though that's an MMO so perhaps not up your alley. It may also slow down simply due to the amount of activity so isn't necessarily a good benchmark either.

'Dear Esther' - (yes, really) - you may or may not like the game, but the graphics are beautiful:

Thanks Joe, MMO games are not my thing sadly.
I hoped that with my spec nothing would struggle at 1080p :-(

Another vote for Guild Wars 2. Some of the scenery and vistas are truly impressive.

While not realistic like Battlefield it has buckets more 'epicness'. I was dumb struck after climbing a mountain and the game engine still drew all the zone below me.

It's a good job you told us what case and fans you have, just so we can adequately determine the perfect game for you.

Also, Battlefield 3 is in another league entirely. Get it.

What disussedgenius said, little is more impressive than the scale (and detail) of Total War.

Personally, I thought Guild Wars 2 is shit and looks only impressive compared to a few other MMOs, but I seem to be in the minority in both respects. :p

I was amazed what a difference an upgrade from an HD4890 to a HD7870 made on Skyrim's frame rate. I expected it to be much more CPU-heavy, but Skyrim has seen the biggest improvements from the upgrade.

With mods, texture packs and ini tweaks, Skyrim is an awesome showcase for a powerful PC.

Why? Steam is nothing but hassle.

Agreed, Skyrim with mods, high texture res pack and full detail is pretty impressive. You definitely need the lot though.

I still don't fancy the character animations and models much to be honest but the world is jaw-dropping at times.

I'll def get Skyrim, I hope it's better than shitty Oblivion.

Another vote for Skyrim, and I'm surprised Sleeping Dogs hasn't been mentioned. I know some lads had issues getting it working properly, but looks amazing to me. Max Payne 3 is another that has a great PC version. Saint's Row 3 has some nice Direct x 11 graphics too.

Edited to add if you love the Fallout games, The Stalker series has some mods that really make it look nice, and it's on sale on Steam at the moment. I still haven't gotten around to playing them, but they look great.

Funnily enough, Skyrim has more in common with Fallout 3 than its contemporary Oblivion did. Playing Skyrim, you can definitely feel the origins of Fallout 3 in it.

It's important that you don't necessarily go into Skyrim with perceptions of it "only being a game" though. If you do that, you'll be disappointed, as it's not terribly challenging after a while. It's best experienced as a fantasy world simulator, if you like.

The problem with Sleeping Dogs is that, like GTA 4, it scales appallingly badly. I got around 20fps from an HD4890, and I get around 30fps from my HD7870, and my slightly aging Phenom II X4 is hardly breaking a sweat in the process.

That being said, there was a fairly marked difference in GTA 4 between the two cards.

Sleeping dogs is quite impressive in places with crowds and colours and particles and things. Not seen it one console though.
