Registered 8 years agoRight, did my first test batch last night and overall, very successful.
Here's the recipe I used - http://www.bbcgoodfood.com/recipes/4900/ - basically halved all the quantities to make a smaller batch.
Very, very easy and surprisingly quick (8 mins to prep/mix, 12 to bake). Came out beautifully and tasted great although I will probably throw in another teaspoon on ginger to give a little more zing. It's also got a lovely crunch and the slab is nice and solid so should be easy to build with - here's some crappy photos:

Registered 6 years agoThe gingerbread is absolutely lovely. That was never going to be the problem. The problem will be attempting to construct something out of it, which we'll do tomorrow. (this will also double as by birthday cake)

Having tried the off-cuts, if anyone's going to use recipe 4900 from the bbcgoodfood site, it needs more ginger added. 4 teaspoons of ginger is not enough. -

During construction
The walls were thicker than suggested since I was worried they'd fail to take the weight of the sizable roof panels.
We then moved on to decoration:
Finished article
Our son also felt it needed some important details:
Important detailing
Credit for the icing icicles goes to my wife, who is much more practiced at baking than me.
Apologies for the stealth giraffe which is still propping up a tree as the icing set!

I saw you tried the recipe I opted for earlier in the thread and I truly wish I'd noticed your comment about the lack of ginger. It was definitely underpowered there.
I also wish our son had drawn his own design instead of sulking. We had to resort to their template in the end.
Thanks all for the kind comments. I tend to leave baking to my wife, so was rather chuffed with the taste and look of it.
I've noticed a lot of roof tiles and xmas lights seem to disappear each time our boy wanders through the kitchen though... -

I think I've learnt to not to be so ambitious on your first attempt at building anything with baking goods.

Few points:
- The green base is actually covering a large gingerbread base
- I initially baked 3 levels for the bad piggie, but it was a nightmare trying to get just one to stand.
- Royal Icing was a very very poor choice for the glue - should've gone for the industrial caramel glue like they used in the Bake-Off. -

I'm surpised about the royal icing. I think mine could have been used to build a ginger bread skyscraper if needed.
Think that was 250g icing sugar to 1 egg white. After it set a bit it was solid. -

Registered 5 years agoNot too long for the actual hands on cooking action. The gingerbread was made and baked quite quickly. It took a few runs to fit it all in the oven.
It then had to cool and get trimmed after. The longest bit was leaving the icing holding the structure up to set overnight.
Decorating took a while. It would have been a lot less if our so hadn't hoovered so many 'tiles' and 'lights' as we did it!
