    @wobbly_Bob Nice, I have a strange urge to visit my local butcher..

    To be fair, they all look pretty amazing - just line 'em up and I'll knock 'em down :)

    @nasty - thanks! I might give that a go if I made that one again.

    @smoothpete- cheers, does that make me a lord now? As a peer I will fight to iradicate the belief the you need egg as a binder to make burgers. I'm looking at you james martin.

    What burgers am I looking forwad to? Since I started I have been eyeing up the highwayman! I'm also looking forwad to the sheboygan, crabby louie, and of course the macho nacho! It's gonna be man vs food stylee when I get to the macho nacho! I'm considering getting on of those round breads and using it as the bun.

    @imo - I agree i did like it, but just a bit strong for me. Maybe I should have used less knowing im not the greatest feta fan. Live and learn!

    Jesus, the Upminster contains 90% Short Rib, the rest is Bone Marrow. That is a cracking mix, so much better than anything you could get in the main supermarkets.

    I can't even get short rib from my local butcher,

    Yeah it was damn good! Plus the meat is properly aged and becauce it's all minced by them from a single lump of meat you can cook it medium rare. I think I might prefer these tri my own home made efforts.

    Have you been making these on a normal grill or something fancy? For some reason I like to picture you as a British Hank Hill, with a massively ostentatious barbecue you could cook a whole cow in.

    wobbly_bob makes better looking food than I see on TV. Holy carp! The downside is that I'm starving now, but my alternatives to bob's delicious looking burgers isn't nearly as tasty. :(

    I wish! I would love a big bbq I could.fit at least 2 cows in! Lack of space and garden prevent it. Maybe one day! Just normal equipment for now!

    Yeah you can buy those ready made burgers from east london steak co, they are very good. Plus they rear and slaughter there own cows. All the meat is minced from a single cow so you can cook it to medium.

    If I'm making my own ( which I normally do ) I use thier mince. I use 250 - 500 grams of mince, depending on how large a burger I want. I crumble a bit of beef stock cube to amp up the flavour of beefy goodness and season. Pack loosely into burger shapes ( too tight will affect texture and times ) and cook em up. Thats roughly it.

    No :) but my friend from Spain family owned a restraunt and she taught me a lot of skills, recipes, sauces, and so on.and how to make proper Valencian paella. After that self taught from lots of reading and practice. I cook most days and try to perect anything I like. For example I made pizza twice a week for like 3 months till I was happy with my dough, sauce, topping ratios.

    Yeah, he likes my burgers, but he will eat pretty much anything. He only wont eat raw onion or prawns, anything else is pretty much up for grabs. When he was young he tried to eat the coffee table.
