    4-5 hours on a very low light is fine for a chilli, it's not like the flavour evaporates away, long cooking is even better if you use some belly pork, or some chuck steak.

    Dirtbox isn't always right about everything.

    Perhaps I misunderstood, but my point is that slow cooking mince doesn't add a thing. Cooking it and re-heating it the day after when it's marinaded is better imo. Just passing on what I've learned.

    No, you introduce small dices of belly pork at the beginning when you're browning the rest of the meat off.

    Belly pork doesn't need to be slow roasted necessarily. It braises just as well.

    My three meat chilli is pretty good. Chuck steak, belly pork and chorizo. Fantastic flavour and very unctuous.

    And yeah, anything that's braised, or slow cooked with this method is always better the next day. Same goes for curries.

    Why is it a stupid idea? It can't harm the flavour, or the texture. Much slower cooking like this breaks down any outstanding connective tissue much better, even if it's mince.

    Anyway, silly argument, there are many, many ways to cook a decent chilli.

    Slow cookers are ace.

    Chilli's just one of those weird dishes - literally everyone who cooks has their own recipe or method that they think is the best.

    In a blind test my chilli will shit on Dirtbox's lofty, massive head.

    In fact, IIRC, DB puts the juice from the kidney bean can into his recipe. I tried it out once. Ugh. Never again.

    Deebs is more or less right in that mince cooked incorrectly in a slow cooker will turn to shit, but if you do it right it's amazing. A proper oldschool dish with mince like bolognese is sometimes cooked for 24 hours+ in rural Italy.

    Actually if you do it in a slow cooker it's fine unless you nuke it, but if you do it in a saucepan, you'll get mush.
