If someone invades you and you aren't seeking out duels then really you can do what you want to them. If they bow, it's nice to bow back before an honourable duel. The only people that really cry about it all are normally the ones who cheat/gank.
If you're using red summon signs for duels, then both should bow and not use flasks/run away etc... I've killed many a person from within a chameleoned flower pot, so no chance for me to bow.. my version of being honourable though was always to let them head back to the starting bonfire and summon people so it would be 2 or 3 v me... then sneakily kill the phantoms
If I invade, and they see me approaching, I'll walk slowly and bow. Then if they bow back I'll wait for the animation to finish and attack.
