You might be able to run past the enemies but in an escort quest that's pretty hard. Anyway, even if you make it past that Chimera, there's tougher monsters ahead. You might not make it.
I failed an escort quest with the innkeeper of Gran Soren.
Basically: I didn't have an inn for the next week. I've also failed a couple of other pretty important side quests which in turn block me from other side quests but that's what NG+ is for, eh.
