Though in terms of doing pulled pork, the slow cooking is a rather fundamentally essential process. Nothing stopping you smoking then slow cooking in liquid after though, and It's something used a lot in the various BBQ cookbooks I have as well as a lot of the BBQ-focused/ general american cooking shows like Drive-Ins, Diners and Dives, Heat Seekers, etc.
