@IJ - I have a very similar character build to you and haven't a single spell in my arsenal that I can use .gif)
So far I haven't felt I'm disadvanataged or met an impossible task.
Offensively, with a high dex you'll be able to deal decent damage with a bow, so ranged spells are not so important - plus there are estus flasks for health recovery so I don't think healing miracles are essential either.
