But that wasn't my issue with the casting. It was the fact that the people cast in the various roles of the Norse pantheon were totally unlike how the Eddas portray them. I mean, Sif was brunette in the film for crying out loud.

You did realize this was based on the Marvel comic book, right? And not the actual mytholgy? She's a brunette in the comic so that was spot on. On the whole the movie was fairly faithfull to it's source material.
