I'm doing a Jaime recipe for sweet potato and chorizo soup for lunch today, hmmm
2 carrots
2 celery sticks
2 med onions
2 garlic cloves
800g sweet potato
200g chorizo sausage
small bunch of parsley
heaped tsp curry powder
2 x veg stock cubes
red chilli
Peel and roughly chop the veg, slice the chorizo.
Heat 2 tbsp oil in a heavy pan, add all the veg, chorizo and chopped parsley.
Mix in the curry powder, and cook for 10mins with lid askew.
Dissolve the stock cubes in 1.8L boiling water then add to the pan.
Reduce the heat and simmer for a further 10mins.
Use a hand blender to pulse the soup until smooth.
Serve with some finely chopped chilli scattered on the top.
Delicious.
