Another vote for Warwick Castle. Pretty expensive to get into, but bloody massive - more like a theme-park in size.
Went there with a few friends last month - spend a day there and didn't even venture inside the castle! There were medieval combat demonstrations, falconry, a parade, jousting tournament, then they fired a burning metal ball from the biggest wooden trebuchet in the world (or Europe or something, but it was big).
Loads to do, and apparently the inside is ace too.
