|As a guess, what phase (solid, liquid, gas) something is in depends on temperature and pressure. The beer was at a high enough pressure that even though it was at a low temperature, it wasn't frozen. When you opened it, you lowered the pressure (which is why it hisses when you open it, gas escaping), and so put it at a pressure where it would be solid given the temperature.|
